
Analysis of the productive capacity of the dolia found in the Garum Shop (I 12, 8) using experimental archaeology methods

The present work shows the potential production of garum estimated for the “Garum Shop” (I 12, 8) at the Vesuvian eruption moment
(79 AD). Results are based on the garum shop production containers (6 dolia) found in the so called “Ambiente 9” and the mass balances
and production data obtained from lab-pilot scale garum production experience assays. Seasonal fluctuations in fresh matters availability
and the elaboration time per batch were taken into account for the production estimates. The total dolia capacity is around 133 and 142
Litres (for liquamen). Considering the 6 dolia were used for garum elaboration, a potential production in a single garum batch in 197-263 L could be estimated (liquamen). The total garum production could reach 1600-2100 Litres per year, enough for 52-78 amphoras/year, thinking in an average weight of 27 Kg for the italic Dressel 21-22 whose content is estimated between 25,66 – 27,96 Kg according
to tituli picti and experimental verifications.
